Ingredients:
- Chickpea flour
- Potato flour
- Tapioca flour
- Bicarbonate of soda
- 1 Egg (medium)
- Avocado or olive oil
- Cheese (mild or medium)
Method:
1. Add 1 tablespoon of chickpea flour to a mixing bowl
2. Add 1 tablespoon of potato flour
3. Add 2 tablespoons of tapioca flour
4. Add 1 teaspoon of bicarbonate of soda
5. Add 1 egg
6. Add 1 tablespoon of avocado or olive oil
7. Add a handful of grated cheese
8. Mix all the ingredients together with a spoon until the dough comes together. The texture needs to be a little bit sticky, but if they feel too sticky you can add another small sprinkling of tapioca flour. (Getting used to the texture is the important part and comes with practice.)
9. Lightly dust your hands with tapioca flour and then roll the dough into a sausage shape. Break in half and then break those 2 sections into thirds, so you have 6 roughly equal size doughballs. Roll them into ball shapes (they will still be fairly sticky) and place on a baking tray.
10. Bake in a pre-heated oven around 180 degrees Celsius for about 10-12 minutes. It's important to take them out once they've just cooked (usually once they start to go golden) - this will keep them soft and moist, ready for some melted butter and jam (or whatever topping you prefer!)
