Ingredients:
- Sweet potato
- Butter
- Grated cheese (mild or medium)
- Tapioca flour
- Potato flour
- Celtic salt
Method:
1. Peel, wash and chop 1 medium sized sweet potato into cubes
2. Boil in a pan until soft and cooked
3. Mash in a bowl
4. Add a teaspoon of butter
5. Add about a cup of grated cheese
6. Add about 2 tablespoons of tapioca flour
7. Add about 2 tablespoons of potato flour
8. Mix it all together, it will be a sticky texture
9. Continue to add potato flour until it forms a slightly, wet dough
10. Roll out thin (on a dusted worktop using potato flour) and sprinkle on some salt
11. Cut into squares, place onto baking paper on an oven tray and poke holes in with a folk
12. Bake at around 175 degrees Celsius until cooked (this takes about 15 minutes, depending on how crispy you prefer them).

Step 9: Slightly wet dough
Step 10: Roll out thin
Step 11: Cut into squares
