Ingredients:
- Sweet potato
- Spinach
- 5 eggs
- Cheese
- Sweet peppers
- Milk
- Butter
- Olive Oil
Method:
1. Peel, wash and thinly slice 1 large sweet potato and cover the bottom and lower edges of a butter-greased baking tin.
2. Drizzle some olive oil over the top of the potato slices and bake in a pre-heated oven at 180 degrees Celsius for about 15 minutes.
3. In a mixing bowl; mix together 5 eggs, a big splash of milk, chopped cubes of cheese, sliced sweet peppers (and any other fruit/vegetables you would like e.g. onion, broccoli, tomato).
4. Remove the baking tin and add chopped spinach and quiche mixture.
5. Bake for 10 minutes and then add some grated cheese on top and bake until cooked and ready to eat.
