Ingredients:
- 4 medium potatoes
- 1 Egg (medium)
- Salt
- Pepper
- Parmesan cheese
- Potato flour
- Filling of choice e.g. mozzarella cheese and spinach
- Butter or oil for frying
Method:
1. Bake 4 medium-sized jacket potatoes for about 1 hour.
2. Once baked, scoop out the potato centres and place into a bowl. (Instead of throwing out the skins, try filling them with cheese, chives and seasoning, and bake until crispy - they're super delicious!)
3. Whilst the potato is still hot, add 1 egg, a pinch of salt and pepper, and about 20g of parmesan cheese. Mix until smooth.
4. Add about 80g potato flour, a little at a time, until the dough is no longer sticky.
5. Roll the dough into a sausage shape and chop into equal size nuggets.
6. Add your desired filling (such as mozzarella cheese and spinach) and then roll them into balls.
7. Place the gnocchi balls into a pan of boiling water and cook for about 3-4 minutes.
8. Drain the water off and transfer the gnocchi into a pre-heated frying pan with a little oil or butter.
9. Fry for about 5 minutes or until golden brown and crispy.
10. Serve, eat and enjoy!
11. Optionally, you could make a sauce to go with the gnocchi (such as a white, garlic or tomato sauce).
