Ingredients:
- Sweet potato
- Tapioca flour
- Potato flour
- Sauce: onions, garlic, tomatoes, pepper, tarragon, basil
- Butter or olive oil
- Toppings: cheese, oregano
Method:
1. Peel, wash and chop 2 medium sized sweet potatoes into cubes.
2. Boil in a pan until soft and cooked.
3. Whilst boiling, make your preferred pizza sauce topping. For example; fry some onions and garlic in butter or olive oil, add fresh or tinned tomatoes, season with pepper, tarragon and basil, and simmer until ready.
4. Once the sweet potato is cooked, then drain and mash in a bowl.
5. Add 1 and a half tablespoons of tapioca flour.
6. Add about 2 and half tablespoons of potato flour.
7. Mix it all together until it forms a slightly sticky mixture. Add more potato flour as needed.
8. Roll out thin (on a dusted worktop using potato flour) and use a round cutter shape to make lots of circles.
9. Place the round mini pizza bases onto baking paper and bake in a pre-heated oven (175 degrees Celsius) for about 5-10 minutes.
10. Remove the bases and add the sauce and toppings (such as grated cheese and oregano).
11. Bake the pizzas until ready to eat - this may take about 10-15 minutes (or longer) depending how soft or crispy you prefer the base.
