Ingredients:
- Cauliflower
- Egg
- Shredded Mozzarella
- Salt
- Herbs
- Fillings: Tuna, Cucumber, Grain-Free Mayonnaise
Method:
1. Cut up about 3/4 of a medium-sized cauliflower into small pieces and whizz it up in a blender to make cauliflower rice.
2. Place the uncooked cauliflower rice into a frying pan with a few tablespoons of water. Stir gently on a low heat for about 5 minutes. Add a little more water if it dries out during this time. Then strain the water out using a muslin cloth.
3. Put the strained cauliflower rice into a bowl and add 1 egg, 1-2 cups of shredded mozzarella cheese, a dash of salt and optional herbs (like basil or oregano) and mix together with a fork.
4. Make 2 wraps by separating the mixture in half. Spread them out and flatten them down on baking paper on a baking tray.
5. Bake in a pre-heated oven at around 220 degrees Celsius for about 8-10 minutes.
6. Roll up your wrap with your favourite fillings inside, e.g. tuna mayonnaise and cucumber.
TOP TIPS:
* You could always eat one and freeze the other.
* These wrap recipes can also be used as pizza bases, too!
