Ingredients:
- Dried Red Lentils
- Water
- 1 Egg
- Bicarbonate of Soda
- Cottage Cheese
- Toppings e.g. Butter and Strawberry Jam
Method:
1. Rinse and soak about 1 cup of dried red lentils in water for about 4 hours.
2. Once ready, add the lentils to a blender.
3. Add 1 egg.
4. Add 1 tablespoon of baking soda.
5. Add 1 small tub of cottage cheese.
6. Blend until smooth.
7. Pour the mixture into a loaf tin lined with baking paper.
8. Bake in a pre-heated oven at 170 degrees Celsius for about 20 minutes - keep an eye on it to make sure it doesn't overcook.
