Ingredients:
- Lamb
- Onion
- Garlic
- Salt
- Pepper
- Coriander
- Sage
- Tallow
- Garlic powder
- Onion granules
- Optional salad
- Optional potato chips/wedges
- Optional tomato passata
- Optional beef bone broth
Method:
1. Add 500g lamb mince (preferably 20% fat option) to a mixing bowl
2. Add 1 finely chopped onion and 5 garlic cloves
3. Add a sprinkling of salt, 1 teaspoon of pepper, 1 and a half tablespoons of coriander, half a tablespoon of sage, half a tablespoon of tallow, and a sprinkling of garlic powder and onion granules.
4. Mix well with your hands, shape into flat rectangles and place on baking paper on a tray
5. Bake in a pre-heated oven (200 degrees Celsius) and bake until cooked (roughly 30 minutes) and browned at the edges.

Step 5: Baked lamb kofta
Lamb kofta can be placed on skewers and they go well with salad, home-made tomato gravy sauce, and home-made chips or wedges. If you're making your own home-made chips, it's a good idea to boil the sliced potatoes first for a few minutes before mixing in with tallow or ghee. Then you can bake them in the oven to make them soft on the inside and crispy on the outside... delicious!
Home-made Tomato Gravy recipe:
1. Add passata tomato sauce to a pan and gently heat
2. Pre-mix beef bone broth and potato flour in cold water, then add to the tomato sauce
3. Simmer for about 20 minutes and then it's ready to eat!
