Ingredients:
- Potato
- Sweet Potato
- Vegetables (Broccoli, Carrot)
- Red Lentils
- Onion
- Garlic
- Butter
- Cheese
- Bone Broth
- Potato Flour
- Herbs
- Salt/Pepper
Method:
1. Heat up a stainless steel frying pan on a low heat, add some butter and gently fry a diced onion with a few garlic cloves. Once cooked, remove from the heat.
2. In a pan, boil some pre-washed lentils for about 20 minutes. After they have been cooking for about 7 minutes, add some sliced carrot, chopped broccoli and diced sweet potato. Once cooked, drain and add to the frying pan. Mix together with the onion and garlic.
3. In a separate pan, boil some sliced potato for about 10-15 minutes until just cooked.
3. In a cup, prepare the bone broth by mixing 2 big tablespoons with about half a tablespoon of potato flour and boiling water.
4. Add the broth mixture to the frying pan and add preferred herbs and salt/pepper. Stir gently and cook on a low heat for a few minutes.
5. Pour the veggie hotpot into a baking tin, add the sliced potato on top and some grated cheese.
6. Bake in the oven or grill until the cheese is golden brown and ready to serve.
