Ingredients:
- Beetroot & Red Lentil Pasta
- Spinach
- Mozzarella
- Butter
- Potato Flour
- Milk
- Cheese optional
- Herbs of choice
- Pepper optional
Method:
1. Boil the beetroot and red lentil pasta
2. Saute the spinach for a few minutes in a frying pan with butter
3. Whilst they cook, make the sauce. In a separate pan, melt a nobble of butter (about one third of a tablespoon).
4. As soon as the butter has melted, remove the pan from the heat and stir in about 1-2 teaspoons of potato flour. It will all soak up together.
5. Place the pan back on the heat and keep adding a good splash of milk and whisk together until the sauce thickens to the preferred consistency. This may take about 5 to 10 minutes.
6. Whisk in optional cheese, pepper and herbs of choice.
7. Once everything is cooked, place the drained pasta, spinach and sauce into a bowl and add strips of mozzarella cheese on top.
