Ingredients:
- Potato
- Onion
- Carrot
- Butter
- Optional Egg
Method:
1. Grate 1 medium-sized potato into a bowl.
2. Grate 1 red onion into the bowl.
3. Grate 2 carrots into the bowl and mix them all together.
4. Squeeze out any excess water using a muslin or simply by squishing the mixture against the side of the bowl and draining it out.
5. Optionally add an egg if you'd like it to stick together better.
6. Add butter to a pre-heated pan and then spoon in the hash brown mixture.
7. Flatten the mixture evenly over the bottom of the pan.
8. Cook for about 10 minutes and keep turning the hash brown over (every 3 minutes or so) to prevent it sticking.
9. Move the hash brown onto a baking tray (on baking paper) and bake in a pre-heated oven on 170 degrees Celsius for about 15 minutes or until golden brown and ready to serve.
TIP: Try adding some grated cheese on top before you bake it in the oven, yummy!
