Ingredients:
- Potato Flour
- Chickpea Flour
- Tapioca Flour
- 1 Egg
- Milk
- Coconut or Avocado Oil
- Black Pepper
- Bicarbonate of Soda
- Veggies and Gravy
Method:
1. Preheat the oven to around 190 - 200 degrees Celsius.
2. Add a large teaspoon of coconut oil and a sprinkle of black pepper to a loaf tray. Let it properly heat up in the oven (takes about 15 minutes).
3. Add about 1 and a half heaped tablespoons of potato flour to a mixing bowl.
4. Add about 3 quarters of a tablespoon of chickpea flour.
5. Add about a quarter of a tablespoon of tapioca flour.
6. Add 1 medium or large sized egg.
7. Add milk (roughly a cup) so the mixed mixture is balanced - not too runny, not too thick.
8. Add a quarter of a teaspoon of bicarbonate of soda.
9. Stir the mixture well to remove any clumps of flour.
10. Once the coconut oil is hot, remove the tin, pour in the mixture (it will sizzle) and then return the tin to the oven. Leave the door closed whilst cooking, which usually takes around 20 minutes to go golden brown.
11. Serve with mashed potato, buttered onions, steamed carrots and broccoli, and bone-broth gravy.
