Ingredients:
- 1 Egg
- Milk
- Fish (e.g. haddock or cod)
- Potato Flour
- Chickpea Flour
- Tapioca Flour
- Baking Soda
- Seasoning (salt, pepper)
- Oil or ghee for cooking
Method:
1. In one bowl, whisk 1 egg with a splash of milk
2. Dice 3 fish into nugget shapes
3. In a separate bowl, make the flour mixture - please bear in mind the amount of mixture you need will depend on the amount of fish and how thick you like your coating. Add 2 tablespoons of potato flour to the bowl.
4. Add 2 tablespoons of chickpea flour
5. Add 1 tablespoon of tapioca flour
6. Add a touch of baking soda
7. Add seasoning like salt and pepper, then blend the flour mixture together
8. Heat up a pan with oil or ghee butter
9. Coat the individual fish pieces in the flour, dip into the egg mixture, then recoat in the flour mixture
10. Once the oil or butter is melted and hot, put the coated fish pieces into the pan
11. Cook the fish nuggets in the pan and turn them over to make sure both sides are evenly cooked
12. You can optionally finish them off in a pre-heated oven around 180 degrees Celsius for around 10 minutes
13. Ready to eat once golden brown
