Ingredients:
- Potato flour
- Chickpea flour
- Tapioca flour
- 1 egg
- Butter
- Water
- Dates
- Sultanas
- Cinnamon
Method - Pastry:
1. Add 2 heaped tablespoons of potato flour to a mixing bowl
2. Add 2 heaped tablespoons of chickpea flour
3. Add 1 heaped tablespoon of tapioca flour
4. Dice about 50g of butter into cubes and add to the flour mixture
5. Work the butter into the flour between your finger tips until it is like breadcrumbs
6. Add 1 small to medium sized egg
7. Bring it all together with your hands until it forms a dough
8. Add more flour a little at a time if it feels too sticky or add a little drop of cold water (or oil) at a time if it feels too dry
9. Once the dough is a good texture, then roll it out on a floured surface to whatever shape you need

Method - FIlling:
1. Put a load of chopped dates, sultanas and a good sprinkling of cinnamon into a pan
2. Cook the mixture in a tablespoon of butter on a low heat for about 15 minutes until the dried fruit is soft and ready
Method - Mince Pies:
1. Use a round cookie cutter to cut out circle shapes of pastry and put them into 2 muffin trays
2. Spoon in the date and sultana mixture on top
3. Add the upper pastry layer on top
4. Bake in a pre-heated oven at 180 degrees Celsius for around 15 minutes or until the pastry is golden brown and cooked
5. Allow time for them to cool, then enjoy eating them!
